Pretty food is always the best food, don’t you agree? I have been way into smoothie bowls as of late. I love that you can top them with so many different crunchy, sweet, savory or otherwise awesome ingredients that make your smoothies that much better! When my 7 year old daughter saw what I was making she got all wide eyed and exclaimed, “Woah, what is that? And can I puulease eat it?” Ha ha ha.
Little did she know that this was a super healthy smoothie. You wouldn’t know by the taste. Honestly this has to be one of the most scrumptious and satisfying smoothies I have ever made! I it filled with all the goods to keep you feeling full of energy for hours. Something I desperately need as a busy, nursing mommy.
A few of the sneaky ingredients are beets, carrots, acai powder and black chia seeds. They really help add that something extra to the dynamic flavors of this smoothie bowl. If you haven’t ever tried one before, you are missing out in a big way! Smoothies have been a huge help in pumping my kiddos (and myself) with good fresh fruits and vegetables without all the whining and fussing around. They actually beg me for these healthy wonders… Who would-a thunk?
Even though the temps are dropping here in Utah, I am still going strong with my smoothie a day. I think I would miss them too much! What are some of your favorite things to put in a smoothie? I’m always up for a little eating adventure!
Here is the recipe:
- 2 frozen bananas, sliced
- 1 cup frozen mixed berries
- ½ cup frozen cherries
- ½ red beet, peeled
- 1 large carrot, peeled and diced
- 1 tablespoon acai powder
- 1 tablespoon black chia seeds
- ½ cup toasted coconut almond milk (or milk of choice)
- 1½ cup water
- 1 cup ice
- 1 tablespoon honey (or sweetener of choice)
- Juice of ½ large lemon
- Frozen mango & papaya chunks
- Chia seeds
- Yogurt swirls
- Place all smoothie ingredients in high powered blender and blend until smooth.
- Pour into 2 bowls.
- Top with desired toppings and eat immediately. Enjoy!
