Mango Banana Nice Cream & Berry Chia Jam

This recipe includes a 2 cup batch of Berry Chia Jam as well. This will last for up to 5 days in the fridge and can be used in a myriad of ways. The Mango Banana Nice Cream serves 1-2. Yum!
  • Mango Banana Nice Cream
  • 2 frozen bananas, sliced
  • 1 cup frozen mango
  • Splash coconut milk
  • Coconut water to desired consistency
  • Berry Chia Jam
  • 2 cups fresh or (thawed) frozen berries
  • 1 teaspoon truvia or sweetener of choice
  • 2 tablespoons lemon juice
  • 1 tablespoon coconut milk (optional)
  • ½ teaspoon vanilla extract
  • 2 tablespoons chia seeds
  1. In a blender pulse together berries, sweetener, lemon juice, coconut milk and vanilla extract.
  2. Pour into bowl or jar. Stir in chia seeds. Cover and let sit for 20 minutes to activate chia seeds.
  3. Eat as is, or blend for a smoother consistency. Enjoy!
