Breakfast perfection to the rescue! This totally crave worthy breakfast (or snack) has been the savior of my week! It has been my go-to high protein snack and breakfast for the week. It’s kept me feeling fuller and more satisfied! That is somewhat of a miracle for a big prego lady like myself…. I just can’t seen to stay full thanks to the sweet baby bundle I happen to be growing at the moment. (He owes me big.) Ha ha.
I made this yogurt parfait a little differently. Instead of using an already flavored greek yogurt like vanilla or coconut or something, I decided to keep it a little lower on the sugar scale and flavor the plain greek yogurt myself using just orange zest. WOW, you wouldn’t believe the huge flavor impact that made. All I did was zest the Cara Cara orange I was going to slice up for my parfait, and added it to a cup or so of plain greek yogurt. I paired that orange zest yogurt with the sliced orange fruit and diced kiwi. I layered it with some of my Orange Vanilla Granola Recipe, which is a low sugar recipe (so yummy) and drizzled it with some raw honey. Oh baby it was gooooood. I’m telling ya, you need this in you life.
It just so happens to be Mothers Day tomorrow, and I can’t help but envision this gorgeous yogurt parfait as the side dish to a breakfast in bed, or a comfy family meal around the table. It would be such a hit!

- 1 orange, zested, peeled and sliced
- 1-2 kiwis, peeled and cut into chunks
- 1-cup plain Greek yogurt
- 1 cup Orange Vanilla Granola (see attached recipe)
- Honey to drizzle on top
- Zest, peel and slice orange and peel and cube kiwi fruits. Set aside.
- In a small bowl mix together orange zest and plain Greek yogurt.
- Layer orange zested Greek yogurt, orange slices, kiwi chunks, granola and drizzled honey. Enjoy!
