This week sure has gotten away from me… How is it Thursday already? Somehow I spent the entire day Tuesday thinking it was Monday! I have been so crazy busy I didn’t figure out the blunder until my husband got home from work and insisted that it was Tuesday. Yes, we missed my daughter’s dance class among other things and completely boggled my mind for the week. I can’t seem to catch up from my double Monday. Crazy.
I know I said I would try to post my Salad Of The Week on Mondays, but apparently that is a little too much commitment for my busy schedule. Lol! I am still going to do a salad every week so don’t fret! Some weeks might be a little more punctual than others, but I will do my best! I have to do a little bragging about my whopping 3 entire days doing 1 carb a day, and eating under my allotted calorie goal/day. Woot woot!!! This is just a small victory, but when you are starting out it sure seems like quite a feat. So, bear with me while I attempt to take back the reins on my diet (and my life for that matter). I hope you don’t mind hearing about my eating goals! I would love to hear from any of you out there that are trying to eat healthier too. Any good tips? What are you doing that is working?
Prepping and having all the fixings for quick salads for the week has truly saved my butt! (Hopefully minimized it too. He he.) My new schedule with my daughter’s school times and nap times for baby boy have made the lunch hour a fickle thing. There isn’t ever a good time to just kick up my feet and enjoy much of a lunch. It has been such a lifesaver to have all the ingredients prepped, chopped, cooked and ready to toss on a plate for a healthy and filling lunch! I am so glad I have committed to this idea. It has proven itself very worthwhile. 🙂
This week I went a little country with this Southwest Chicken Salad with (healthy) Chipotle Ranch Dressing. Delicious, spicy, filling and most importantly healthy! The dressing is so simple. I love using Chobani Greek Yogurt to make this dressing because it seriously reduces the calories and fat content of creamy dressings. Huzzah for Greek yogurt!
There’s all your pretty little fixings! This will go as far as at least 4 main dish salads. You can make this for a dinner or prep it all like I did to keep on hand for quick, healthy meals! You pick! Either way it is so yummy.
I was in the mood for something hot the day I was making this salad, so I sauteed the chicken, beans and corn together with a little salt, pepper and cayenne. I love that you can serve this salad with hot meat (if you have the time) or right out of the refrigerator and it’s just as good!
