Slice up your ripe ruby red romas.
Give them a small dice. Add them to a medium sized bowl.
Mince your jalapeno peppers. I leave in the seeds and membrane because I like my salsa on the spicy side. Yeah baby!
Slice and dice your peppers of choice. You could add green peppers in the mix too if you like, but I think the red, yellow and orange are sweeter and add a fun flavor to the salsa.
Pick out three cloves of garlic. Mince those up and toss em in!
Ooooh la la. Its looking pretty so far!
Add fresh juice of 1/2 lemon and 1/2 orange. If you don’t have fresh you could add 2-3 tablespoons of the non-fresh variety too. Whichever works.
Now because I don’t have a garden bursting at the seams with heirloom tomatoes at the moment I used a can of diced tomatoes. Just smash them up a titch and add them.
You will start out seasoning the salsa with some salt and pepper to taste. After everything has marinated together for about an hour I like to give it one more taste test. Sometimes it needs extra salt at that point.
Wash your cilantro and take off the stems. Then give it a rough chop.
Boom baby! (In the words of my daughter Elena) You are pretty much ready to feast your eyes and your tummy on some darn good Springtime Salsa!
