Harris Family Bran Muffins
I have been craving these muffins for quite some time. I have happy memories of making these as a little girl and loving that I was big enough to do it all on my own. I love the rich flavor of this muffin recipe and it is so convenient and easy!
These Bran Muffins are something else. I am telling you my husband tried them for the first time today, and he literally drooled while eating this right in front of me. We laughed about it all morning. He was shocked that something so delicious came out of the Microwave…. Yes. Your heard me right. I nuked these babies, and Yes, they are DELICIOUS!!! Who says nothing good can be cooked out of the Microwave??
Well, I do usually, but this is truly the exception!
Here is the greatest part about these Muffins. You mix up the batter and it can be stored in the refrigerator for up to six weeks. Its true!
These are the early morning instant hot muffins you have all been dreaming of, and they are a great source of fiber! All you have to do is spoon out however much you want into a microwave safe bowl and cook them for about a minute. Then you check them, and continue cooking for 15 second intervals until cooked in the center. DONT OVERCOOK THESE. If you do they loose their moist goodness.
I love that you don’t have to cook an entire dozen either. You can make this for just one person if you want! Give them a try. You will see what I mean. 🙂
I served up my Bran Muffins with some melted butter, strawberry jam and fresh berries! It is a lovely breakfast. Have fun with your instant Bran Muffins!
Here is the secret recipe:
1 cup shortening
1 2/3 cup Sugar
5 cups flour
5 teaspoons baking soda
1 teaspoon salt
3 cups Kellogs All Bran
2 cups bran flakes
1 quart buttermilk
In a medium sized bowl mix together shortening and sugar. Add 4 eggs to this mixture one at a time (mixing after each egg is added).
In a separate large bowl mix together flour, baking soda and salt.
Add the wet ingredients of the medium bowl to the dry ingredients alternately with the buttermilk until it is combined well.
Fold in Kellogs All Bran and bran flakes.
**The batter is more flavorful if it has sat in the refrigerator over night. The bran flakes and all bran have time to marry into the batter and creates a better flavor. I suggest baking or microwaving muffins the day after you make the batter.
Heat Oven to 400 degrees.
Bake in greased muffin tins for 20 minutes.
Microwave one portion in a bowl for 1 minute, then check the batter, if it is still lighter colored and shiny on top it isn’t done. Cook for 15 seconds more and check. Repeat until barely done in the center. Make sure to not overcook. Check if they are done by testing with a toothpick and see if it comes out dry. If so, get ready to eat to your hearts content!
